Quinoa & Chickpea Power Bowl

Why it’s great: High protein + iron + fiber → keeps you full for hours.

🧾 Ingredients

  • 1 cup cooked quinoa

  • ½ cup boiled chickpeas

  • Cucumber (chopped)

  • Cherry tomatoes

  • Grated carrot

  • Spinach or lettuce

  • 1 tbsp pumpkin seeds / sunflower seeds

Dressing:

  • Olive oil

  • Lemon juice

  • Salt + black pepper

  • Optional: tahini

🥣 Steps

  1. Add quinoa as base.

  2. Layer veggies + chickpeas.

  3. Drizzle dressing.

  4. Toss lightly.
