🧾 Ingredients
1 cup cooked quinoa
½ cup boiled chickpeas
Cucumber (chopped)
Cherry tomatoes
Grated carrot
Spinach or lettuce
1 tbsp pumpkin seeds / sunflower seeds
Dressing:
Olive oil
Lemon juice
Salt + black pepper
Optional: tahini
🥣 Steps
Add quinoa as base.
Layer veggies + chickpeas.
Drizzle dressing.
Toss lightly.
